- Oatmeal Cookie Crust:
1 cup all-purpose flour
1 cup rolled oats
3/4 cup brown sugar
12 tablespoons butter, softened

2 tablespoons butter
3-4 medium apples, peeled, cored, and diced into 1/4-inch cubes
1/3 cup brown sugar
3 tablespoons water
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon + 1 teaspoon cornstarch
2 tablespoons water

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners to prevent sticking.
Prepare the Oatmeal Cookie Crust: In a large bowl, mix together the flour, rolled oats, and brown sugar. Add the softened butter and mix until the mixture is crumbly. Press the mixture into the bottom of each muffin cup to form the crust.
- Homemade Apple Filling Option: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the diced apples, 1/3 cup brown sugar, 3 tablespoons water, cinnamon, and nutmeg. Cook until the apples are tender, about 8-10 minutes. In a small bowl, mix the cornstarch and 2 tablespoons of water. Add the cornstarch mixture to the skillet and cook until the apple mixture thickens. Remove from heat.
Assemble the Apple Crisp Bites: Spoon the apple filling (either homemade or canned) into each muffin cup on top of the oatmeal cookie crust. If using homemade filling, ensure it’s evenly distributed among the cups.
- Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the crust is golden brown and the filling is bubbly.
Optional Caramel Topping: Drizzle caramel topping over each apple crisp bite after they’ve cooled slightly for an extra indulgent touch.
- Cool and Serve: Allow the apple crisp bites to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
