Description

A delicious and healthy twist on the classic grilled cheese sandwich featuring creamy avocado, fresh mozzarella, and juicy tomatoes.


Ingredients

  • ½ avocado, sliced
  • 4 slices mozzarella cheese
  • 4 cherry tomatoes, sliced in half
  • 2 slices multigrain bread (such as Ezekiel sprouted grain bread)
  • A dab of butter

Instructions

  1. Heat a skillet over medium heat.
  2. Spread a dab of butter on one side of each slice of bread.
  3. Place one slice of bread, butter side down, in the skillet.
  4. Layer the mozzarella cheese, avocado slices, and cherry tomatoes on top of the bread in the skillet.
  5. Top with the second slice of bread, butter side up.
  6. Cook until the bottom slice is golden brown, then carefully flip the sandwich and cook the other side until golden and the cheese is melted.
  7. Remove from skillet, slice, and serve warm.

Notes

  • For extra flavor, add a sprinkle of salt and pepper to the avocado and tomatoes.
  • Feel free to use any type of bread you prefer.
