A delicious and healthy twist on the classic grilled cheese sandwich featuring creamy avocado, fresh mozzarella, and juicy tomatoes.
Ingredients

- ½ avocado, sliced
- 4 slices mozzarella cheese
- 4 cherry tomatoes, sliced in half
- 2 slices multigrain bread (such as Ezekiel sprouted grain bread)
- A dab of butter
Instructions
- Heat a skillet over medium heat.
- Spread a dab of butter on one side of each slice of bread.
- Place one slice of bread, butter side down, in the skillet.
- Layer the mozzarella cheese, avocado slices, and cherry tomatoes on top of the bread in the skillet.
- Top with the second slice of bread, butter side up.
- Cook until the bottom slice is golden brown, then carefully flip the sandwich and cook the other side until golden and the cheese is melted.
- Remove from skillet, slice, and serve warm.
Notes
- For extra flavor, add a sprinkle of salt and pepper to the avocado and tomatoes.
- Feel free to use any type of bread you prefer.
- This sandwich can be customized with additional ingredients like spinach or pesto.
