Baked Apple Fritters Recipe

  • Author: Elyna

Description

Baked Apple Fritters offer all the comforting flavors of traditional apple fritters with a healthier twist. By baking instead of frying, you can enjoy these sweet treats with less guilt.

Ingredients

Scale

For the Fritters:

  • 3/4 cup all-purpose flour
  • 3/4 cup white whole wheat flour
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt
  • 6 tablespoons butter, cold and cut into pieces
  • 1/2 cup milk (the higher the fat content, the richer the flavor)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped apple

For the Glaze:

  • 1 cup confectioner’s sugar
  • 2 tablespoons milk (a higher percentage of fat works the best)
  • 1 teaspoon vanilla extract

Instructions

Step 1: Preheat the Oven and Prepare the Baking Sheet

  1. Preheat Your Oven:
Preheat your oven to 375°F (190°C). This ensures the fritters bake evenly and develop a golden-brown exterior.
  2. Prepare the Baking Sheet:
Line a baking sheet with parchment paper or lightly grease it with nonstick spray. This will prevent the fritters from sticking and make cleanup easier.

Step 2: Mix the Dry Ingredients

  1. Combine Dry Ingredients:
In a large mixing bowl, whisk together 3/4 cup of all-purpose flour, 3/4 cup of white whole wheat flour, 1/2 cup of brown sugar, 2 teaspoons of baking powder, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, 1/4 teaspoon of allspice, and 1/4 teaspoon of salt. Whisk until the ingredients are well combined and evenly distributed.

Helpful Tip: Using white whole wheat flour adds fiber and nutrients without compromising the flavor or texture of the fritters.

Step 3: Cut in the Butter

  1. Cut in the Butter:
Add 6 tablespoons of cold butter, cut into small pieces, to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

Cooking Tip: Make sure the butter is cold; this helps create a tender texture in the baked fritters.

Step 4: Prepare the Wet Ingredients

  1. Combine Wet Ingredients:
In a separate bowl, whisk together 1/2 cup of milk, 1 egg, and 1 teaspoon of vanilla extract until well combined.
  2. Mix the Dough:
Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix, as this can result in tough fritters.
  3. Fold in the Apples:
Gently fold in 1 cup of chopped apples until they are evenly distributed throughout the dough.

Helpful Tip: For the best flavor, use a sweet, crisp apple variety like Honeycrisp or Fuji.

Step 5: Shape and Bake the Fritters

  1. Shape the Fritters:
Using a spoon or an ice cream scoop, drop mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound slightly with the back of the spoon.
  2. Bake the Fritters:
Bake in the preheated oven for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.

Step 6: Prepare the Glaze

  1. Mix the Glaze:
While the fritters are baking, prepare the glaze by whisking together 1 cup of confectioner’s sugar, 2 tablespoons of milk, and 1 teaspoon of vanilla extract in a medium mixing bowl. The glaze should be smooth and slightly thick. If it’s too thick, add a little more milk until you reach the desired consistency.

Step 7: Glaze the Fritters

  1. Glaze the Fritters:
Once the fritters are done baking, remove them from the oven and allow them to cool for a few minutes on the baking sheet. While they are still warm, dip the tops of the fritters into the glaze, or drizzle the glaze over the top using a spoon.
  2. Cool Completely:
Allow the glazed fritters to cool on a wire rack until the glaze is set.

Notes

Ingredient Substitutions:

  • Flour:
You can substitute the all-purpose flour with a gluten-free flour blend if you need a gluten-free option. Be sure to use a blend that’s designed for baking.
  • Apples:
Feel free to experiment with different apple varieties. Granny Smith apples will add a tartness that contrasts nicely with the sweetness of the glaze, while Golden Delicious offers a milder flavor.
  • Butter:
For a dairy-free option, substitute the butter with a plant-based alternative or use coconut oil. Keep in mind that this may slightly alter the flavor and texture.

Flavor Variations:

  • Spices:
Enhance the spice profile by adding 1/4 teaspoon of ground ginger or a pinch of cloves to the dry ingredients.
  • Nuts:
For added texture, fold in 1/2 cup of chopped walnuts or pecans along with the apples.
  • Glaze Alternatives:
If you prefer a different glaze, try a maple glaze by replacing the milk in the glaze with maple syrup. Alternatively, a caramel glaze would complement the apple flavor beautifully.
