Ingredients

  • ¼ cup basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt, to taste
  • 8 oz feta cheese block, crumbled
  • ½ block cream cheese (4 oz), softened
  • ½ cup sour cream
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon olive oil
  • Salt, to taste
  • More basil leaves, chopped (for garnishing)
  • Red pepper flakes (for garnishing)
  • Parmesan cheese, freshly grated (for garnishing)

Instructions

  1. In a mixing bowl, combine the diced Roma tomatoes, chopped basil, minced garlic, extra virgin olive oil, balsamic vinegar, and salt. Mix well and set aside.
  2. In another bowl, blend the crumbled feta cheese, softened cream cheese, sour cream, minced garlic, lemon juice, olive oil, and salt until smooth and creamy.
  3. In a serving dish, layer the cheese mixture at the bottom and top it with the tomato mixture.
  4. Garnish with additional chopped basil, red pepper flakes, and freshly grated Parmesan cheese.
  5. Serve with crackers, bread, or vegetables for dipping.

Notes

  • For a spicier dip, add more red pepper flakes.
  • This dip can be made ahead of time; just assemble it before serving.
  • Feel free to substitute the feta cheese with goat cheese for a different flavor.
