Ingredients

    3/4 cup all-purpose flour

    1/4 teaspoon salt
    3 large eggs
    1/2 cup granulated sugar
    1/4 cup packed light brown sugar
    1 teaspoon vanilla extract
    2 cups finely grated carrots
    1/4 cup powdered sugar (for rolling)
  • For the Cream Cheese Frosting:
    1 package (8 oz) cream cheese, softened
    1 cup powdered sugar
    1 teaspoon vanilla extract
    1/2 cup unsalted butter, softened

Instructions

  • Prepare the Cake:

    Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and grease it lightly.
    In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

  • Mix the Wet Ingredients:

    In a large bowl, beat the eggs, granulated sugar, light brown sugar, and vanilla extract until thick and pale.
    Gradually add the dry ingredients to the wet mixture, mixing until just combined.
    Fold in the grated carrots.

  • Bake the Cake:

    Re-roll the cake without the towel.
    Wrap the cake roll tightly in plastic wrap and refrigerate for at least 1 hour before serving.
