  • 1/2 cup oil or almond butter
  • 1 1/2 tbsp pure vanilla extract
  • 1 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, combine the sugar (or xylitol), shredded zucchini, oil (or almond butter), vanilla extract, and water.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. If using, fold in the mini chocolate chips.
  6. Pour the batter into a greased cake pan.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before serving.
