Delicious and easy-to-make corn fritters that are perfect for a snack or appetizer.
Ingredients

- 1 can whole kernel corn
- 2 eggs
- Salt & pepper, to taste
- 1/2 cup flour
- 1 tsp baking powder
- 1/2 cup shredded cheese
- 1 pat butter
- 2 tbsp oil
- 1/4 cup chopped parsley
Instructions
- Drain the whole kernel corn and discard the liquid.
- In a bowl, beat eggs with salt and pepper until well combined. Add flour and baking powder, whisking until a smooth batter forms.
- Stir in the drained corn and shredded cheese until evenly mixed.
- In a fry-pan, heat butter and oil over medium heat until bubbly.
- Drop spoonfuls of the corn mixture into the fry-pan. Cook until golden brown on one side, then flip and cook the other side until golden and crispy.
- Remove the cooked fritters and drain them on absorbent paper to remove excess oil. Serve hot, garnished with chopped parsley.
Notes
- For extra flavor, consider adding spices like paprika or garlic powder.
- These fritters can be served with a dipping sauce of your choice.
