Ingredients

  • 1 can whole kernel corn
  • 2 eggs
  • Salt & pepper, to taste
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 cup shredded cheese
  • 1 pat butter
  • 2 tbsp oil
  • 1/4 cup chopped parsley

Instructions

  1. Drain the whole kernel corn and discard the liquid.
  2. In a bowl, beat eggs with salt and pepper until well combined. Add flour and baking powder, whisking until a smooth batter forms.
  3. Stir in the drained corn and shredded cheese until evenly mixed.
  4. In a fry-pan, heat butter and oil over medium heat until bubbly.
  5. Drop spoonfuls of the corn mixture into the fry-pan. Cook until golden brown on one side, then flip and cook the other side until golden and crispy.
  6. Remove the cooked fritters and drain them on absorbent paper to remove excess oil. Serve hot, garnished with chopped parsley.
