1 pound ground beef
1 small onion, diced
Salt & pepper, to taste
2 tablespoons taco seasoning
1 teaspoon garlic powder
1 cup long grain white rice
1 ½ cups beef broth
1 (15 ounce) can corn, drained
8 ounces tomato sauce
½ cup salsa
1 cup shredded cheese
Instructions
- Cook the Ground Beef:
1.1. In a large pot or deep skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain any excess fat.
1.2. Season with salt, pepper, taco seasoning, and garlic powder. Stir well to combine. - Add Rice and Liquids:
2.1. Add the long grain white rice to the pot, stirring to coat the rice with the beef mixture.
2.2. Pour in the beef broth, tomato sauce, and salsa. Stir to combine. - Cook the Rice:
3.1. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes, or until the rice is cooked and has absorbed the liquid.
3.2. Stir in the drained corn and adjust seasoning if necessary. - Add Cheese and Serve:
4.1. Sprinkle the shredded cheese on top of the casserole. Cover and let sit for a few minutes until the cheese is melted.
4.2. Serve warm, garnished with additional salsa or chopped cilantro if desired.
