  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika or chili powder (optional, for a spicy kick)
  • 2 tablespoons chopped fresh parsley or dill
  • 3 tablespoons olive oil (for frying)

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, salt, egg, gluten-free flour, Parmesan cheese (if using), garlic, black pepper, paprika or chili powder (if using), and chopped herbs.
  3. Mix until well combined.
  4. Heat olive oil in a skillet over medium heat.
  5. Drop spoonfuls of the mixture into the skillet, flattening them slightly to form fritters.
  6. Cook for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove from the skillet and place on paper towels to drain excess oil.
