For the Cream Cheese Filling:
8 oz cream cheese, softened ¼ cup powdered sugar
For the Topping:
1 tablespoon cinnamon sugar mixture Optional: ¼ cup white chocolate, melted (for drizzle)
Instructions
Prepare the Muffins: 1.1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners. 1.2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon. 1.3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined. 1.4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Prepare the Cream Cheese Filling: 2.1. In a small bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
Assemble the Muffins: 3.1. Spoon a small amount of muffin batter into each muffin cup, filling about 1/3 full. 3.2. Add a teaspoon of the cream cheese filling on top of the batter in each cup. 3.3. Cover the cream cheese filling with the remaining muffin batter, filling each cup about 2/3 full. 3.4. Sprinkle the cinnamon sugar mixture over the top of each muffin.
Bake the Muffins: 4.1. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. 4.2. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Optional Drizzle: 5.1. If desired, melt the white chocolate and drizzle over the cooled muffins for an extra touch of sweetness.
