Description

Key Lime Meringue Pie is a delicious dessert featuring a tangy lime filling, a buttery graham cracker crust, and a fluffy meringue topping.


Ingredients

  • 1 1/2 cups / 200 g / 7 oz graham cracker crumbs (approx. 11 full-sheet graham crackers)
  • 1/4 cup / 50 g / 1.8 oz granulated (white) sugar
  • 6 tbsp / 85 g / 3 oz butter, melted
  • 2 x 14-oz cans / 880 g sweetened condensed milk (full-fat)
  • 1 cup / 240 ml / 8 fl oz fresh-squeezed key lime juice
  • 5 large egg yolks (reserve the whites for the meringue)
  • 1 tbsp grated key lime zest, packed (from 3 to 4 key limes)
  • 1/2 tsp matcha powder (or a few drops green food coloring, optional)
  • 5 large egg whites
  • 1 cup / 200 g / 7 oz granulated sugar
  • 1/2 tsp cream of tartar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well.
  3. Press the mixture into the bottom and up the sides of a pie dish to form the crust.
  4. Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let cool.
  5. In another bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, lime zest, and matcha powder (if using) until smooth.
  6. Pour the lime filling into the cooled crust.
  7. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
  8. Gradually add granulated sugar while continuing to beat until stiff peaks form.
  9. Spread the meringue over the lime filling, making sure to seal the edges.
  10. Bake for an additional 10-15 minutes until the meringue is golden brown.
  11. Let the pie cool before serving. Enjoy!

Notes

  • For best results, use fresh key limes for the juice and zest.
  • Make sure the egg whites are at room temperature for better volume.
  • Store leftovers in the refrigerator.
