- 3–4 medium-sized zucchini, sliced
- 2 tomatoes, diced
- 1/2 white onion, chopped
- 4–6 slices of bacon, cooked and crumbled
- 1 block sharp cheddar cheese, shredded
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1/2 stick of butter, melted
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced zucchini, diced tomatoes, chopped onion, crumbled bacon, and both cheeses.
- In a separate bowl, mix the olive oil, melted butter, garlic powder, oregano, salt, and pepper.
- Pour the oil mixture over the zucchini mixture and stir until well combined.
- Transfer the mixture to a greased baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
- This dish can be made ahead of time and reheated before serving.
- For a vegetarian version, omit the bacon.
