A comforting and delicious Mac and Cheese Meatloaf Casserole that combines the classic flavors of meatloaf with creamy macaroni and cheese.

- 1 cup ketchup
- 1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
- 2 lbs lean ground beef
- 30 Ritz Crackers, crushed
- 2 oz Lipton onion soup mix
- 2 eggs
- 3 cups macaroni noodles
- 2 cups milk
- 10.5 oz condensed cheddar cheese soup
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 4 cups shredded mozzarella and cheddar cheese blend
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the ground beef, crushed Ritz Crackers, onion soup mix, eggs, salt, pepper, garlic powder, and onion powder. Mix well.
- In a separate pot, cook the macaroni noodles according to package instructions. Drain and set aside.
- In another bowl, mix together the milk, condensed cheddar cheese soup, and barbecue sauce.
- Add the cooked macaroni to the meat mixture and stir to combine.
- Pour the cheese sauce mixture over the meat and macaroni, and mix until everything is well coated.
- Transfer the mixture to a greased casserole dish and top with shredded mozzarella and cheddar cheese blend.
- Bake in the preheated oven for 45-50 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add some hot sauce to the meat mixture.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This dish can be frozen for up to 2 months; reheat in the oven before serving.
