Description

A comforting and delicious Mac and Cheese Meatloaf Casserole that combines the classic flavors of meatloaf with creamy macaroni and cheese.


Ingredients

  • 1 cup ketchup
  • 1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
  • 2 lbs lean ground beef
  • 30 Ritz Crackers, crushed
  • 2 oz Lipton onion soup mix
  • 2 eggs
  • 3 cups macaroni noodles
  • 2 cups milk
  • 10.5 oz condensed cheddar cheese soup
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 4 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, crushed Ritz Crackers, onion soup mix, eggs, salt, pepper, garlic powder, and onion powder. Mix well.
  3. In a separate pot, cook the macaroni noodles according to package instructions. Drain and set aside.
  4. In another bowl, mix together the milk, condensed cheddar cheese soup, and barbecue sauce.
  5. Add the cooked macaroni to the meat mixture and stir to combine.
  6. Pour the cheese sauce mixture over the meat and macaroni, and mix until everything is well coated.
  7. Transfer the mixture to a greased casserole dish and top with shredded mozzarella and cheddar cheese blend.
  8. Bake in the preheated oven for 45-50 minutes, or until the cheese is bubbly and golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add some hot sauce to the meat mixture.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This dish can be frozen for up to 2 months; reheat in the oven before serving.
