⅔ cup Minute Rice
2 ¾ cups milk
⅓ cup sugar
1 tablespoon butter
½ teaspoon salt
½ teaspoon vanilla
¼ teaspoon nutmeg
Cinnamon, to taste
½ cup raisins
Instructions
- Cook the Rice:
1.1. In a medium saucepan, combine the Minute Rice, milk, sugar, butter, and salt.
1.2. Bring the mixture to a boil over medium heat, stirring constantly. - Simmer:
2.1. Once the mixture reaches a boil, reduce the heat to low and simmer for 6-8 minutes, or until the rice is tender and the mixture has thickened, stirring frequently to prevent sticking. - Add Flavors:
3.1. Remove the saucepan from heat and stir in the vanilla, nutmeg, and raisins.
3.2. Sprinkle with cinnamon to taste, stirring to combine. - Cool and Serve:
4.1. Let the rice pudding cool slightly before serving.
4.2. Serve warm or chilled, garnished with additional cinnamon if desired.
