Description

Delicious Pumpkin Pie Crumble Bars that combine the flavors of pumpkin pie with a crunchy crumble topping, perfect for fall.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, combine the all-purpose flour, rolled oats, 1 cup of packed brown sugar, baking soda, and salt. Pour in the melted butter and stir until well-mixed to form your crumble mixture.
  3. Press half of the crumble mixture into the prepared baking dish, ensuring it’s evenly spread to form the base layer.
  4. In a separate bowl, whisk together the pumpkin puree, granulated sugar, 1/4 cup brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin mixture over the crumble base, spreading it evenly to cover the entire surface.
  6. Top with the remaining crumble mixture. If desired, sprinkle chopped walnuts on top for added crunch and flavor.
  7. Bake for 40-45 minutes, or until the top is golden brown and the pumpkin filling is set.
  8. Allow the bars to cool completely before slicing and serving.

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
