  • 12 oz (340g) pasta (spaghetti, penne, or fusilli)
  • 2 tbsp olive oil
  • 2 medium zucchinis, sliced into half-moons
  • 1 1/2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 tsp Italian seasoning
  • 1/4 cup grated Parmesan cheese (plus extra for serving)
  • 1/4 cup fresh basil, chopped
  • 1/2 cup reserved pasta water (if needed)

Instructions

  1. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced zucchini and sauté for about 3-4 minutes until they begin to soften.
  3. Stir in the halved cherry tomatoes and minced garlic. Cook for an additional 2-3 minutes until the tomatoes start to burst and release their juices.
  4. Sprinkle in the salt, black pepper, red pepper flakes (if using), and Italian seasoning. Stir well to combine.
  5. Add the cooked pasta to the skillet and toss to combine with the vegetable mixture. If the pasta seems dry, gradually add reserved pasta water until desired consistency is reached.
  6. Remove from heat and stir in the grated Parmesan cheese and chopped basil. Mix until well combined.
